Appeltrath ont d\u00e9cid\u00e9 de se mettre \u00e0 leur compte, en mettant d\u00e9lib\u00e9r\u00e9ment l'accent sur la cuisine v\u00e9g\u00e9talienne. \u201eJe suis moi-m\u00eame v\u00e9g\u00e9talien, et pour moi, c'\u00e9tait clair : soit on fait du v\u00e9g\u00e9talien, soit on laisse tomber\u201c, explique-t-il. Pour lui, la motivation \u00e9tait d'\u00e9tablir une cuisine cool \u00e0 base de plantes, qui n'existait pratiquement pas jusqu'\u00e0 pr\u00e9sent en Hesse rh\u00e9nane. Pour lui, il est essentiel de d\u00e9velopper avec son \u00e9quipe des plats qui offrent profondeur et diversit\u00e9. \u201eEn se limitant, on devient plus cr\u00e9atif\u201c, dit-il. L'\u00e9quipe essaie toujours de cr\u00e9er des plats durables et raffin\u00e9s, ce qui est rendu possible par la passion commune pour la cuisine. L'acceptation est croissante et de plus en plus de clients appr\u00e9cient la qualit\u00e9 et le go\u00fbt des plats \u00e0 base de plantes. Il souligne : \u201eAu final, ce n'est que de la nourriture. Cela ne fait de mal \u00e0 personne et c'est une question de conscience\u201c. Pour lui, la cuisine v\u00e9g\u00e9talienne est un choix moral, qui est \u00e9galement respectueux du climat et prot\u00e8ge les animaux. De plus, il ne s'est jamais senti lui-m\u00eame en meilleure forme depuis qu'il se nourrit exclusivement de v\u00e9g\u00e9taux. De nombreux plats typiques de la Hesse rh\u00e9nane ont toujours \u00e9t\u00e9 v\u00e9g\u00e9tariens. Spundek\u00e4s, Backesgrumbeere, tarte aux oignons, Dibbekuchen... savoureux, \u00e0 base de l\u00e9gumes et d\u00e9licieux avec un bon verre de vin.
