Gr\u00fcnewald en Jan W. Appeltrath voor zichzelf te beginnen - en richtten zich bewust op de veganistische keuken. \"Ik ben zelf veganist en het was voor mij duidelijk: of we gaan veganistisch eten of we doen het niet,\" legt hij uit. Voor hem was de motivatie om een coole plantaardige keuken op te zetten die tot nu toe nauwelijks bestond in Rheinhessen. Gr\u00fcnewald is positief over de ontwikkeling van de plantaardige keuken in Rheinhessen. \"Het is een niche aan het verlaten en wordt steeds breder erkend,\" zegt hij. De acceptatie groeit en steeds meer gasten waarderen de kwaliteit en smaak van plantaardige gerechten. Hij benadrukt: \"Uiteindelijk is het gewoon eten. Het schaadt niemand en het is een kwestie van bewustzijn.\" Voor hem is de veganistische keuken een morele keuze die ook klimaatvriendelijk is en dieren beschermt. Bovendien heeft hij zich nog nooit zo fit gevoeld sinds hij uitsluitend plantaardig eet. Veel typisch Rijn-Hessische gerechten zijn altijd vegetarisch geweest. Spundek\u00e4s, Backesgrumbeere, uientaart, Dibbekuchen... hartig, plantaardig en heerlijk met een goed glas wijn.
